Feuerstein - this name always makes you feel like you're back in the Stone Age, if you're of the right age - but, and readers may forgive my smirk, already in a splendidly imaginative one...this in memory of Fred Feuerstein and of course his wife Wilma. In fact, the Feuerstein family runs this business, and to put it bluntly, it has nothing whatsoever to do with the Stone Age. Just looking at the building, you can see that they believe in their own skills and the future that comes with them. For the uninitiated, the connection between ham production and cheese dairy may not be obvious, but it all fits together. This is because the pigs here are fed with grain and with the sweet whey produced by Briglar cheese production. This is how this particularly tender, easily digestible meat is produced. The sources of supply are exclusively mountain farms in the immediate vicinity. The range in this respect extends to: Meat from these local farmers / finest raw sausages of the same origin / a lightly smoked and air-dried ham & bacon / homemade raw ham with sea salt and natural spices - lightly smoked and air-dried for 4 months. But that is not all. The other part of this farm is dedicated to very special cheese production. The smallest farming structures with their high alpine forage (herbs and alpine grasses are enormously important for Briglar cheese) form the basis for this valuable natural product. Here, they see themselves as a genuine hand cheese dairy and the ripening takes place directly on site in their own ripening cellar. This guarantees the absence of silage. Once again, this is an example that we would like to cite and definitely recommend for a visit. We believe that the text vividly describes how important such undertakings are for the culture and cultural landscape in the alpine region, and if you can support something like this with pleasure - there is no need to explain that in more detail...!
